Fall is here, and you know what that means!

PUMPKINS! 

Whether you grow your own or buy them in the store there are plenty to go around so today I though I would share a fall/pumpkin themed soup!

Ingredients
  1. 2 tsp coconut oil
  2. 1.5 yellow onion, diced
  3. 5 garlic cloves, minced
  4. 2 cups pumpkin, peeled and small dice
  5. 2 cups vegetable broth
  6. 2 cups of coconut milk
  7. 1 bay leaf
  8. ¼ tsp dried thyme
  9. 2 TBS red curry paste
  10. ½ tsp nutmeg
  11. A pinch of salt
  12. Pepper to taste
  13. 4 TBS fresh cilantro
Instructions
  1. First, heat coconut oil over medium heat.
  2. Add the onions, garlic and pumpkin and cook 5 minutes.
  3. Add the vegetable stock, coconut milk, bay leaf, thyme and curry paste and cook for 20 minutes. If needed add more stock.
  4. Remove the mixture from the stove.
  5. Remove the bay leaf and either puree with an immersion blender or use a regular blender.
  6. Place back on the stove and add the spices.
  7. Heat until warm.
  8. Garnish with chopped cilantro.
