 1 ⅓ cups Whole wheat pastry flour
  cup All-purpose flour
 1 ⅓ tbsp Egg replacermixed with ⅓ cup water)
 1 ⅓ cups Soymilk
 2 ⅓ tbsp Oil
 1 ⅓ tbsp Baking powder
 2 tsp Sugar
  tsp Salt
 Nonstick cooking spray or oil for greasing

Prep batter:

    • In a large bowl, whisk together the egg replacer, water, soymilk, and oil until smooth.

    • In a separate bowl, combine the whole wheat flour, all-purpose flour, baking powder, sugar, and salt.

    • Gradually add the dry ingredients to the wet mixture, stirring until just combined (small lumps are okay; avoid overmixing).

Cook waffles:

    • Preheat your waffle iron to medium-high heat. Lightly grease the plates with cooking spray or oil.

    • Pour ½–⅔ cup batter (depending on waffle iron size) onto the center of the hot iron. Close and cook for 3–5 minutes, or until steam stops escaping and waffles are golden and crisp.
