Make the glaze: In a small bowl, whisk together the soy sauce, ginger, garlic, sriracha (if using), and water. Set aside.
Prep the tofu: Pat the tofu dry with a paper towel. Cut into ½-inch thick slices or cubes.
Sear the tofu: Heat the oil in a large nonstick skillet over medium-high heat. Arrange the tofu in a single layer (work in batches if needed). Sear undisturbed for 3–5 minutes per side, or until golden and crisp.
Coat with glaze: Reduce heat to medium. Pour the glaze over the tofu, tossing gently to coat all pieces. Cook for 1–2 minutes, stirring frequently, until the sauce thickens into a glossy coating and clings to the tofu.
Finish and serve: Remove from heat. Drizzle with sesame oil (if using) and serve hot over rice, noodles, or greens.
